When it comes to easy pie crust recipes, graham cracker pie crusts might get all of the attention, but you might be surprised by just how light and delicious a cornflake crust can be. Cornflake cereal as a pie crust ingredient might sound surprising to you, but ask any housewife from the 1930s, and they will tell you that this was a staple.

Crunchy, old-fashioned, and unique, this crust will become a conversation piece among your family and guests. So easy to make with only three ingredients—sugar, butter, and of course, cornflakes—this crust is ready to use in minutes. Better yet, this cornflake crust recipe does not need to be baked and is perfect to use for the base of a cream pie like this delicious sugar cream pie recipe, our favorite pecan pie, or this classic custard pie recipe.

Ingredients

  • 1 cup crushed cornflakes

  • 2 tablespoons sugar

  • 1/3 cup (5 1/3 tablespoons) unsalted butter, melted and cooled

Steps to Make It

  1. Gather the ingredients.

  2. Combine the crushed cornflakes, sugar, and cooled, melted butter together until thoroughly blended.

  3. Press the mixture into the bottom and up the sides of an 8- or 9-inch pie plate.

  4. Fill the crust as desired.

Tips

  • Crush the cornflakes by placing them in a plastic bag, and tightly close it. Lay the bag flat on a counter, and use a rolling pin to crush the cornflakes. If you have one available, you can also place the cornflakes in a food processor to crush them quicker.
  • Make sure the melted butter is cool before mixing it with the other ingredients.
  • Use your fingers, a large spoon, or the bottom of a flat measuring cup to press the cornflake mixture in place evenly on the pie plate.
  • This crust is great for cream pies and custard pies, but also try this with a fruit filling, such as cherries or blueberries.

Recipe Variation

  • Don't have cornflakes on hand? Try toasted oats, honey oats, corn or Rice Chex cereal.
