Pecan Waffles

This is so good when it's warm straight from the waffle maker.

Try these for a late night dessert sometime.

These are best eaten warm.

Prep Time: 15 minutes

Cook Time: 05 minutes

Ingredients:

  • 2 egg yolks
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1/3 cup oil
  • 2 cups flour
  • 1 tablespoon baking powder
  • 2 egg whites, stiffly beaten
  • 1/2 cup chopped pecans (or others such as walnuts, macadamia nuts, hazelnuts...)

Preparation:

Preheat waffle iron according to manufacturers' instructions. Mix all ingredients, except egg whites and nuts, in large bowl. Stir only until moistened. Fold in egg whites. Evenly spread approximately 1 tablespoon nuts over waffle iron. Pour 1/2 cup (or more depending on iron) batter over nuts. Close lid. Cook until steam stops escaping (about 3 to 5 minutes).

Yield depends on size of waffle iron.
