Ingredients:
- 2 egg yolks
- 1/2 teaspoon salt
- 2 cups milk
- 1/3 cup oil
- 2 cups flour
- 1 tablespoon baking powder
- 2 egg whites, stiffly beaten
- 1/2 cup chopped pecans (or others such as walnuts, macadamia nuts, hazelnuts...)
Preparation:
Preheat waffle iron according to manufacturers' instructions. Mix all ingredients, except egg whites and nuts, in large bowl. Stir only until moistened. Fold in egg whites. Evenly spread approximately 1 tablespoon nuts over waffle iron. Pour 1/2 cup (or more depending on iron) batter over nuts. Close lid. Cook until steam stops escaping (about 3 to 5 minutes).Yield depends on size of waffle iron.
