Ingredients:
- 1 package Italian lady fingers
- 2 tablespoons Frangelico Liqueur or orange juice
- 8 ounces mascarpone
- 1 cup canned pumpkin puree
- 1 teaspoon plus cinnamon*
- 1/2 teaspoon ground ginger*
- 1/4 teaspoon mace*
- 1-1/2 cups powdered sugar
- 1 teaspoon orange extact
- 2-1/2 cups heavy cream, whipped, divided
- ---
- * or 1-3/4 teaspoons pumpkin pie spice
Preparation:
Arrange ladyfingers on the bottom of a 9-inch square pan. Pour the Frangelico liqueur or orange juice over ladyfingers.In a mixing bowl, blend together mascarpone and pumpkin puree. Add spices, powdered sugar and orange extract. Fold in 1-1/2 cups whipped cream. Pour over ladyfingers. Gently spread remaining whipped cream on top of pumpkin mixture. Sprinkle top with additional cinnamon or pumpkin pie spice. Cover and refrigerate at least two hours before serving, or overnight. Slice to serve.
