Easy Fruit Cereal Rolls

Looking for a recipe for some easy sweet rolls? Not only is this recipe easy to make, but it uses up any leftover cereal and fruit you may have.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • 1-1/2 cups crushed cereal*
  • 1/4 cup packed dark or light brown sugar
  • 2 teaspoons cinnamon
  • ----
  • 3 cans (either 10 small or 8 large biscuits per can) refrigerator biscuits
  • ----
  • 1/2 cup melted butter in flat bowl
  • ----
  • 3/4 to 1 cup chopped fruit**
  • ----
  • 1/4 cup honey
  • 2 tablespoons brown sugar

Preparation:

Preheat oven to 375 degrees F. Grease 8-inch square or round baking pan. Combine cereal, brown sugar and cinnamon. Pace into a flat bowl. Separate biscuits. Overlap ends of 2 biscuits. Press together and form into rectangle. Dip into butter. Next dip into cereal mixute. Make sure to cover all sides. At short end of biscuit rectangle, place 1 teaspoon of fruit. Roll up from short end. Place in baking pan. Repeat with the rest of the biscuits. Bake for 25 to 30 minutes.

For glaze, measure honey in microwavable glass measuring cup. Add remaining butter and brown sugar. Stir to combine. Microwave for 1 to 2 minutes on high or until boiling. Pour glaze over just baked rolls. Makes 24 to 30 easy sweet rolls.

*Use any leftover cereals you may have. I used the rest of the box of a flake and nut cereal, a few frosted flakes and a small fist-full of crushed granola to get the entire amount. If you are using a very sweet cereal, I wouldn't add as much brown sugar to the mixture. Also, if you happen to be using a cereal that has lots of cinnamon in it, don't add as much cinnamon.

**The first time I made this was with a cored, peeled and chopped pear. The second time I made it with a fairly large banana. This would probably work with a chunky applesauce or even part of a drained, canned fruit cocktail.
