My Favorite Carry-Along Summer Desserts

Fourth of July or any summer event is perfect for two of my favorite summer carry-along dessert recipes: Dirt and Margarita Pie. Dirt is especially good for picnics with lots of kids. Margarita Pie is great for adults at a picnic or pool parties. The salty pretzel crust really makes it.

Hint: Both recipes can be kept in a cooler with an ice block or bag of ice. To keep them really cold, I place a section of newspaper firmly pushed down over the top of the cold items. Store your cooler in the shade.

Dirt

• 1/4 cup butter
• 1 8oz pkg. cream cheese
• 3-1/2 cup milk
• 2 (3 1/2 oz. each) packages instant French or regular vanilla pudding
• 1 (12oz.) container whipped topping
• 1 (20oz.) package chocolate sandwich cookies
• gummy worms
• 8-inch plastic flower pot (unused)
• garden trowel (unused)
• aluminum foil

Margarita Pie

• 1/2 cup butter
• 5 ounces ounces pretzels
• 1 tablespoons sugar
• 1-1/2 quarts vanilla ice cream
• 3 ounce* frozen limeade concentrate
• 2 ounce tequila
• 1 ounce orange liqueur
• 1 whole lime

*Sometimes I have trouble getting the 3 ounce size of limeade. I end-up buying the bigger size and use the rest of the concentrate to make limeade.
