Lefse - Norwegian Potato Pancakes

Growing-up Dad would make these pancakes for me.

Prep Time: 25 minutes

Cook Time: 2 minutes

Total Time: 27 minutes


  • 3 cups potatoes, riced or mashed
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 5 tablespoons shortening, melted
  • 1-1/2 cups flour


Combine first 4 ingredients. Gradually add flour. Shape into 1-1/2 inch balls. Roll out on floured board until 1/8 or an inch thick. Grill on moderately hot griddle until bubbles and then turn. We just buttered one side, sprinkled sugar on them and then rolled them up and ate them.

I think there's a typo on this recipe. The sentence should have read 1/8 OF an inch thick instead of 1/8 OR an inch thick.
