I never tried kumquats until my in-laws bought a house with a kumquat tree in the backyard. They have a wonderful sour taste that goes perfectly in this Kumquat Nut Bread recipe.

Prep Time: 25 minutes

Cook Time: 50 minutes

Ingredients:

  • 2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup sugar
  • 2/3 cup milk
  • 2 eggs
  • 2 tablespoons butter, melted and cooled
  • 3/4 cup pureed kumquats*
  • 3/4 cup nuts, chopped and lightly toasted

Preparation:

Preheat the oven to 350 degrees F. Grease an 8x4x2-inch loaf pan.

Combine first five ingredients in a large bowl with a wire whisk. In a medium sized bowl, whisk together milk, eggs, butter and pureed kumquats. Add wet ingredients into dry ingredients. Stir only until wet. Fold in nuts. Pour batter into prepared pan.

Bake for 50 to 60 minutes. Cool in pan on rack for 15 minutes. Remove and completely cool on rack.

Makes one 8x4x2-inch loaf of Kumquat Nut Bread.
