Apricot Bread

Apricot Bread is a flavorful quick bread.

Prep Time: 25 minutes

Cook Time: 50 minutes

Ingredients:

  • 1 (15 ounce) can apricot halves, divided
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup nuts, toasted

Preparation:

Preheat oven to 350 degrees F. Grease and flour 9 x 5 pan.

Drain apricots. Save syrup. Take 1/2 apricots and cut each into 6 pieces. Set aside. Puree other 1/2 apricots in food processor. Add enough syrup to make 1/2 cup.

Whisk together flour, baking powder, soda, and salt.

In a large bowl, cream together shortening and sugar. Add eggs one at a time, and beat fill fluffy. Add apricot puree. Mix in dry ingredients until just moistened. Gently stir in apricot pieces and nuts. Spread batter into prepared pan.

Bake for 50 minutes. Remove from pan, and cool on a rack.
