There is so much good stuff in this quick bread. There are apples, toasted pecans and caramels in this recipe for Caramel Apple Nut Bread.

Yield: Two loaves


  • Bag of caramels
  • One pound sweet-tart* apples (about two medium)
  • 1 cup chopped pecans, divided
  • ----
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • ----
  • 1 cup (8 ounces) butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 eggs
  • 1 teaspoon vanilla extract


From the bag of caramels, unwrap 22. Put the rest of the bag of caramels away in pantry for later use. Cut each caramel into quarters (4 pieces). Set aside. Wash, peel, core and chop apples. Set aside. Lightly toast 1/2 cup of the chopped pecans. Set aside.

Preheat oven to 325 degrees F. Grease and flour two loaf pans. In a medium bowl, combine flour, baking soda, cinnamon, nutmeg and salt with a wire whip. Stir in chopped apples and 1/2 cup toasted nuts. Set bowl aside.

Cream the butter and sugars. Add eggs one at a time. Blend in vanilla. Hand stir in dry ingredients from medium bowl into the butter mixture. Stir until just combined.

Carefully pour or spoon batter into prepared pans. Sprinkle 1/2 of the caramel pieces over top of batter in one pan. Sprinkle one half of the untoasted pecan pieces over the same pan. Repeat with the other loaf pan. Bake for 1 hour, text for doneness. If not done, bake for 5 minutes intervals until done. You may have to tent pans towards end of baking.

Caramel Apple Nut Bread Serving Suggestion**: Spread real butter on an 1-inch slice. Heat in the microwave for 15 seconds. Either with a fork or your fingers, eat and enjoy your homemade Caramel Apple Nut Bread.

**This bread does taste best when served warm. If you serve this Cinnamon Apple Nut Bread cold or room temperature, the caramels will go back to their original form. You may end-up taking a bite of this bread and having to remove a caramel that has been stuck on your teeth.
