Crème Brûlée


Crème Brûlée is a simple, yet very elegant dessert.

Prep Time: 25 minutes

Cook Time: 45 minutes


  • 2 cups heavy cream
  • vanilla bean, split
  • 6 tablespoons (plus) sugar
  • 5 large egg yolks


Preheat oven to 325 degrees F. Butter custard cups. In a heavy pan, bring cream and vanilla bean to a boil. Beat sugar and yolks with electric mixer until pale and thick. Remove vanilla bean from cream. While mixer is running on low, very slowly add hot cream. Pour cream mixture into prepared custard cups. Place into roasting pan. Pour simmering water into pan, only half way up the sides of the cups. Bake for 35-45 minutes. Remove cups from pan and let cool. Just before serving, sprinkle tops with granulated sugar and caramelize by placing cups under broiler until bubbly. Makes either 4 to 6 servings depending on cup size.
