Cranberry Pudding

Please enjoy this recipe for Cranberry Pudding. It's an old fashioned steamed pudding recipe.

Prep Time: 20 minutes

Cook Time: 1 hour, 25 minutes

Ingredients:

  • 2 cups fresh cranberries, rinsed and sliced
  • 1 cup raisins, golden or black
  • 1/2 cup chopped nuts, lightly toasted
  • 1/2 cup snipped dates
  • 1/2 cup light molasses or corn syrup
  • 1-1/3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/3 cup boiling water

Preparation:

In a mixing bowl, stir together fruits and nuts. In a separate bowl with a wire whisk, combine flour, baking soda and salt. Add to fruit mixture and stir. Add molasses and water. Stir well. Pour into well-greased 6-cup mold. Cover tightly with foil; tie with string. Place a rack into a stock pot large enough to hold mold. Place mold onto rack. Carefully, add 1-inch boiling water around mold in stock pot. Cover pot and steam for 1 hour and 15 minutes. Add more water as necessary. Cool for 10 minutes before un-molding.

Serve warm with a Hard Sauce
