Black Cherry Clafouti

It's hard not to just eat these lovely cherries the way they are.

The cherry liqueur really heightens the flavor in this recipe for Black Cherry Clafouti.

Prep Time: 25 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 pound bing cherries, pitted and halved
  • cherry liqueur (Kirsch)
  • 4 tablespoons butter, melted and cooled
  • 3/4 cup sugar
  • 1/2 cup flour
  • 1 cup almonds, toasted, finely ground
  • 4 eggs
  • 2/3 cup milk

Preparation:

Put cherries in a bowl and cover with Kirsch. Preheat oven to 375 degrees F. Lightly grease shallow 9-inch ceramic baking dish or tart pan.

Mix together sugar, flour, and ground almonds. Beat in butter, eggs, and milk. Drain cherries and put in bottom of pan. Pour batter over cherries. Bake for 30 minutes or until set.

It's great served with whipped or ice cream.
