This recipe for Orange Peel Sauce is a cross between a preserve and a dessert sauce. It works well on waffles as well as on an egg roll. It stiffens-up in the refrigerator. If you want a looser sauce just heat the amount you want to use in the microwave.

Yield: 1 cup of Orange Peel Sauce
Ingredients:
- Peels* from 4 large oranges
- water
- 2 cups sugar
Preparation:
Cut orange peels into thin slivers. In a large sauce pan, cover the peels with water. Boil on high for 5 minutes. Drain, reserving 2 cups of water.
Put water back into pot. Stir in sugar. Add peels. Boil on medium for 30 to 45 minutes until thickened. Store in the refrigerator.
Notes in the Margin:
*During the winter we eat quite a few oranges. So as we peel our oranges, I'll place them in a resealable plastic bag and store the peels in the refrigerator. I make this recipe once we've peeled enough oranges.

Vanilla Ice Cream
