Either use your fingers or a fork to seal the edges of the top and bottom crusts together. Before I put my pie in the oven (on a foil lined baking sheet), I either paint the crust with an egg or milk wash. If I do milk, I then sprinkle the top crust with sugar. Not only does it add just a little sweetness to the crust, but it makes my pie sparkle.
