Chocolate Peanut Butter Cup Pie

If you like that oh, so familiar chocolate-peanut butter combination, this recipe for Chocolate Peanut Butter Cup Pie is for you.

Prep Time: 25 minutes

Cook Time: 35 minutes

Ingredients:

  • ---Chocolate Cookie Crust---
  • 1-2/3 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 3 tablespoons butter, softened
  • ---Peanut Butter Filling---
  • 2/3 cup peanut butter
  • 2/3 cup corn syrup
  • 1/3 cup brown sugar
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 3 eggs
  • ---Chocolate Topping---
  • 2 tablespoons butter
  • 2 tablespoons corn syrup
  • 1/2 cup semi-sweet or dark chocolate chips
  • ---Optional Garnish---
  • whipped cream
  • 2 regular sized peanut butter cup candies, cut in quarters

Preparation:

Crust

Preheat oven to 375 degrees F. Mix crumbs, sugar and butter. Press firmly into bottom and up sides of 9-inch pie plate. Bake for 5 minutes. Turn oven down to 350 degrees F. Remove to wire rack for cooling.

Filling

Combine all filling ingredients except eggs. Stir until smooth. Add eggs one at a time until completely combined. Pour into crust. Place pie plate on cookie sheet. Bake in oven for 30 minutes. Cool completely on wire rack.

Topping

In small sauce pan over low heat, melt butter with corn syrup. Stir in chips until melted. Spread topping evenly over top of pie. Once completely cool, decorated with optional garnish.

Garnish

Pipe whipped cream around top of pie next to crust. Evenly space peanut butter cup quarters.
