Yield: One 9-inch Pie
Ingredients:
- 1/4 cup warm water
- 3 tablespoons cornstarch
- 6 cups fresh berries, washed, dried and hulled, if necessary
- 3/4 cup sugar
- 2 tablespoons lemon, lime or orange juice
- one 9-inch graham cracker crust
Preparation:
In a saucepan over medium heat, add water. Whisk in cornstarch. Add 2 cups of berries. Sprinkle with sugar. Mash berries in pan. Bring to a boil, stirring constantly. Simmer on low until liquid is thick and clear. Remove from heat and stir in juice. Allow to cool for a half hour. Stir in 3 cups of berries. Spoon into prepared graham cracker crust. Sprinkle remaining cup of berries over top of pie. Lightly press down to stabilize berries. Chill for at least 3 hours prior to servings.
