Sopaipillas

Sopaipillas is a favorite dessert in Mexican restaurants.

Prep Time: 25 minutes

Cook Time: 2 minutes

Total Time: 27 minutes

Ingredients:

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 tablespoon butter or butter-flavored shortening
  • 1/2 teaspoon sugar
  • warm water
  • honey, warmed
  • cinnamon-sugar mixture
  • oil for fryer or deep frying pan

Preparation:

Begin to heat oil in fryer or deep iron skillet. Combine dry ingredients. Cut in butter. Add enough water to form a dough similiar to a pie crust. Allow to rest a covered bowl for 20 minutes. Roll-out to 1/8 inch retangular shape. Cut in diamond shapes. Fry in oil. Drain on paper towels. Serve warm with honey and sprinkled with cinnamon mixture.

New Mexican Comfort Food, Member Edwardspet1

I grew up with sopaipillas, as this is a traditional food from New Mexico. We put honey on them or stuff them with various foods such as pinto beans and cheese, ground beef and chicken. BUT one must not forget green or red chile when stuffing the sopaipillas!! As soon as I saw this recipe, I was really homesick, so thank you SO much for making this recipe available!! I had lost my original recipe. These are also good when made with yeast, as the yeast makes them puffier!!
