There are only 7 carbs per serving in this recipe for Lemon Zest Ricotta Crème.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 1-cup part-skim ricotta cheese
  • 1/2 teaspoon grated lemon zest
  • 1 squeeze of lemon juice
  • 1/2-teaspoon vanilla extract
  • 2 packages sugar substitute

Preparation:

Before dinner mix all together in a individual bowls. Put in refrigerator. Serve after dinner.

Makes 2 servings.

*Note: We used Splenda as the artificial sweetener.

This is just about what Cannoli cream filling is. Since I am doing low carbs I won't eat the cannoli tube but the cream is so delicious. To make this really creamy whip the ricotta with 2 tablespoons of heavy cream and make sure you chill thoroughly. Also you can garnish with chopped almonds or fresh berries.
