  • 1-cup part-skim ricotta cheese
  • 1/2 teaspoon grated lemon zest
  • 1 squeeze of lemon juice
  • 1/2-teaspoon vanilla extract
  • 2 packages sugar substitute


Before dinner mix all together in a individual bowls. Put in refrigerator. Serve after dinner.

Makes 2 servings.

*Note: We used Splenda as the artificial sweetener.

Lemon Ricotta Wow!, Member unclespamalot

Just made this using stevia and added 2oz of Phila.-style cream cheese and a sprinkle of cinnamon. Light, creamy, satisfying, tasty and two great portions! If you like all things lemon, you will love this! Could not be easier to make...thank you, thank you, thank you!
