Yield: Serves 9
Ingredients:
- 1 cup fresh raspberries, washed and drained
- 1 cup fresh blueberries, stemmed, washed and drained
- 1 cup diced mangoes
- 1/2 cup plus 3 tablespoons Splenda, divided
- 3 cups fat-free sour cream
- 1 tablespoon vanilla extract
- 9 springs of fresh mint
Preparation:
Place raspberries in small saucepan with 1 tablespoon Splenda. Stir over medium heat until thickened. Repeat same procedure with blueberries and diced mangoes. Allow all to cool before preparing parfaits.
Whip together sour cream, vanilla extract and remaining 1/2 cup Splenda, using a wire whip, until smooth.
In each In each martini/parfait glass, put a layer of raspberry mixture, then a layer of sour cream mixture, and finish off with blueberry and mango mixture.
Chill. Serve garnished with a sprig of fresh mint.
