Follow this simple recipe to make a Low Calorie Lemon-Blueberry Snack Cake.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 12 - 16 pieces

Ingredients:

  • One Pillsbury® Sugar-Free Classic Yellow Premium Cake Mix
  • 1 teaspoon lemon extract
  • 2 egg whites
  • 12-ounce can sugar free lemon-lime soda
  • 1 cup blueberries, stemmed, washed and drained

Preparation:

Preheat oven to 350 degrees F. Lightly spray a 9x13-inch baking pan. Mix together all the ingredients except the blueberries. Mix on low for one minutes. Mix on medium for 2 more minutes. Hand stir in blueberries. Pour batter into pan. Bake for 30 minutes. If desired, top with whipped cream sweetened with artificial sweetener.
