Marcia's Frozen Passover Dessert

Marcia says that kids just love Frozen Passover Dessert. It's a change over the same old Passover desserts.

Prep Time: 55 minutes

Cook Time: 10 minutes

Ingredients:

  • -----Crust-----
  • 1 can (5 ounces) macaroons
  • 2 tablespoons margarine
  • 1/2 cup chopped nuts
  • -----Filling-----
  • 2 egg whites at room temperature
  • 1 cup sugar
  • 2 cups sliced fresh strawberries
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • -----Sauce-----
  • 10 ounce package frozen strawberries
  • 1 cup fresh strawberries, sliced
  • 3 tablespoons frozen orange juice concentrate, undiluted
  • 2 tablespoons orange marmalade, optional
  • 1 tablespoons current jelly
  • 1-2 tablespoons Brandy for Passover, optional

Preparation:

Crust:
Put macaroons and margarine in food processor and chop. Add nuts and press into bottom of spring form pan. Bake at 350 degrees F. for 7 to 10 minutes until golden brown. Do not over bake.
Filling:
Cover bowl with shield and beat approximately 10-15 minutes at high speed. It will get thick and almost form peaks. Pour into the spring form pan and freeze it until serving.
Sauce:
Mix by hand and put in gravy boat. Serve cake out of freezer (wait a couple of minutes to cut so crust will soften a little put a little sauce on each plate or serve sauce in a sauce boat.
