The big difference between ice cream and gelato is that gelato is made with milk instead of cream. Believe it or not, you still get a big pistachio flavor without the nuts. I added mine back in because we love nuts.
Prep Time: 15 minutes
Cook Time: 2 minutes
Allow This Time in Freezer: 2 hours
Total Time: 2 hours, 17 minutes
Yield: Makes 1 Quart
Ingredients:
- 3 cups whole milk
- 3/4 cup sugar
- 1 cup pistachio nuts, finely chopped
- green food coloring, optional (as you can tell, I didn't use any)
Preparation:
Combine milk and sugar in saucepan. Bring to a boil. Remove from the heat and stir in nuts. Allow to come to cool. Refrigerate for at least 2 hours or overnight. Pour through strainer to remove nuts. Freeze according to ice cream maker’s directions.
