Peach Ice Cream

Not only does this recipe for Peach Ice Cream use fresh peaches but the mixture is cooked in the microwave.

Prep Time: 25 minutes

Cook Time: 45 minutes

Ingredients:

  • 2 cups milk
  • 1-3/4 cups sugar, divided
  • 3 eggs, beaten
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 4 to 6 very ripe peaches, peeled and pitted
  • 4 cups heavy cream

Preparation:

In 3-quart casserole add milk, 1 cup sugar, eggs and salt. Cover and cook at high power in microwave for 4-6 minutes or until milk is scalded. Stir once during cooking. Cool to room temperature.

Puree peaches. Stir in 3/4 cup sugar into 2-1/2 cup of puree. Add peach puree and heavy cream to milk mixture. Freeze according to ice cream maker directions.

Makes 2 quarts.
