A machine isn't needed to make this kid-friendly recipe for vanilla ice cream.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 2 coffee cans with lids (1 pound and 3 pound)
  • 1 cup milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • duct tape
  • crushed ice
  • 1-1/2 cups plus rock salt

Preparation:

Place milk, cream, sugar and vanilla in 1 pound can. Cover with plastic lid and seal with duct tape. Place can in 3 pound can. Fill with as much crushed ice as possible. Evenly sprinkle with 1/2 of rock salt. Cover with plastic lid. Seal with duct tape. Roll can for about 10 minutes. Be careful not to damage rolling surface. Open 3 pound can dump water and add more ice and salt. Roll for another 10 minutes. Makes about 2-1/2 cups soft ice cream.

I call this Coffee Can Campfire Ice Cream and it is a major hit among the kids and young-at- hearts! This can also be modified by adding a couple of tablespoons of your favorite instant pudding for different flavored ice cream. I would also recommend wrapping a dish towel around the large can and securing it with duct tape before rolling or kicking for faster freezing. Enjoy.
