It you aren't able to get Mexican vanilla at least use pure vanilla not imitation. The difference in price is well worth it in flavor.
Mexican vanilla is my favorite.

In baking and making desserts, you get the best results by using the best ingredients. To me, the best vanilla you can get is from Mexico. It may not be the most expensive, but it's the best. I'm on my third brand and it's just as good as the other two.
