Kataifi Rolls a.k.a. Hairy Fingers

Everyone loves these honey and nut-filled Greek cookies.

My husband grew-up eating these cookies. He has always called them "Hairy Fingers," because that's what they look like. To me, they look like medium-sized shredded wheat covered in honey. These Greek Pastry cookies are time consuming to make, but worth it. Enjoy!

Prep Time: 1 hours, 00 minutes

Cook Time: 1 hour, 05 minutes

Ingredients:

  • 1/2 pound chopped almonds or walnuts
  • 1/2 C. toasted bread crumbs
  • 1/2 C. sugar
  • 1/2 C. orange juice
  • 1 pound Kadaifi pastry
  • 1-1/4 C. butter, melted
  • For the Syrup:
  • 3 C. sugar
  • 2 C. water
  • 1/2 C. honey
  • 2 T. lemon juice
  • cinnamon

Preparation:

Preheat oven to 350 degrees F. Grease baking pan. Mix nuts, crumbs, sugar and orange juice. Divide the long threads of kadaifi pastry into 16 to 18 portions. On the end of each portion, place 1 heaping tablespoon of nut mixture. Roll up loosely. Place rolls side by side in pan, but not too closely. Pour butter over rolls and bake for 45 minutes.

Remove rolls from oven. While rolls are resting for 20 minutes, combine syrup ingredients in saucepan. Boil for 5 minutes. Pour syrup over rolls. Cover with dish towel. Allow syrup to absorb for 5 or 6 hours. Sprinkle with cinnamon.
