Start with clean, dry one pint canning jars. Be sure to follow the washing instructions on the canning jar box. If re-using jars, be sure to use brand new lids and seals. You'll need 6 jars for the batter of one 2-layer recipe.
* Wide mouth 1 pint jars will work best when trying to "dump" the cake out. I wasn't able to get them. I used regular canning jars. I only had one extra jar left after passing out the others to the teachers. We, my husband, daughter and I, sat at the kitchen table each with spoon in hand and passed the jar around until it was empty.
Thanks to Scooterskitten in my Desserts and Baking Forum
for giving me the idea for perfect teacher gifts. Scooterskitten bakes cakes in canning jars to send as care packages to her husband in Iraq. She told me that he often shares them with the other soldiers who happen to be having a bad day. Her latest posting is about how her husband traded one canning jar cake for two monster coffee energy drinks. She said that monster coffee energy drinks are like gold over there. I guess these cakes are quite valuable, too.
