Three Fruit Gelatin

This is such a cool and refreshing dessert option.

This treat was made with sugar-free raspberry gelatin and a chopped McIntosh apple.

It's your choice. Make the recipe as it or use your choice of chopped fruit and gelatin flavor.

Prep Time: 2 hours, 15 minutes

Cook Time: 02 minutes

Ingredients:

  • 20 ounce can crushed pineapple, undrained
  • 2 packages (4-servings each) flavored gelatin*
  • 18 ounce whole berry cranberry sauce
  • 1 cup chopped fruit**
  • 2/3 cup chopped and lightly toasted nuts, optional

Preparation:

Drain pineapple, reserving liquid in 4-cup (1-quart) measuring cup. Add enough cold water to make 3 cups of liquid. Heat in saucepan until boiling. Remove from heat and add gelatin packets. Stir for 2 minutes. Add cranberry sauce and stir to combine. Pour into serving and/or storage bowl. Cover and refrigerate for 1 to 2 hours or until slightly thickened. Stir in pineapple, chopped fruit and nuts. Return to refrigerator for at least 4 hours. Serves 8.

*Suggested gelatin flavors: black cherry, cherry, cranberry, raspberry, strawberry and the rest.
**Suggested chopped fruit: tart apples, other apples or pears.
Note: I made mine with sugar-free raspberry Jell-O, a tart apple and toasted pecans. My daughter didn't care for the nuts; so next time we'll leave them out.
