Mandarin Orange Salad is great served as a salad or for a light summer dessert.
Prep Time: 25 minutes
Ingredients:
- 24 ounces cottage cheese
- 2- 4 ounce boxes orange gelatin
- 2 - 11 ounce cans Mandarin oranges, drained
- 8 ounce whipped topping, defrosted
- 1/2 cup chopped pecans, lightly toasted (optional)
Preparation:
In mixing bowl sprinkle gelatin granules over cottage cheese. Mix in oranges. Add whipped topping and completely combine. Place in serving container and refrigerate for an hour or so before serving.
