Light and Easy Fruit Icing

Not only is this recipe light and easy, it's quick too.

Ingredients:

  • 1/2 cup fruit preserves or curds*
  • 1/4 cup water
  • 8 ounce container whipped topping, thawed
  • 3/4 cup powdered sugar

Preparation:

In medium bowl, mix water with preserves and/or curd. Stir in whipped topping and powdered sugar. Makes enough for 2- 8 or 9-inch cake layers.

*Preserves like Strawberry, Seedless Raspberry. Curds such as Lemon or Lime. Marmalades may also work. If there's too much fruit in the preserves, you may wish to put it in the blender with the water to thin it out a little. Jellies
