Keystone Resort Hamburger Cupcakes

This fun treat is made with both vanilla and chocolate cake.

I hope you enjoy these cupcakes. The recipe is courtesy of award-winning executive pastry chef Ned Archibald of the Keystone Resort. The Keystone Resort, located just an hour from Denver, Colorado, is as well-known for its year-round outdoor adventures as well as its delectable indoor cuisine.

Prep Time: 1 hour, 00 minute

Ingredients:

  • vanilla cupcakes
  • sesame seeds
  • un-frosted chocolate cake
  • apricot marmalade
  • yellow food color
  • raspberry marmalade
  • ketchup
  • buttercream icing
  • marzipan from recipe below -
  • ---Marzipan---
  • 2 cups granulated sugar
  • 1/8 teaspoon cream of tarter
  • 4 cups ground almonds (or almond meal)
  • 2 egg whites
  • powdered suger
  • red and green food coloring

Preparation:

How to make the dessert hamburger cupcakes:

Take vanilla cupcakes* and sprinkle the top with sesame seeds. Cut them in 1/2 to create the bun.

Cut chocolate cake in circles and lay on top of the bottom cup cake to create the meat layer.

The mustard is an apricot marmalade with yellow food color.

Use raspberry marmalade for the ketchup.

The mayonnaise is a dollop of butter cream.

The lettuce and tomatoes are made from marzipan with green and red food color.

To assemble, follow the same process as creating a real hamburger: bottom bun, chocolate cake, mustard, lettuce, tomato, ketchup, mayonnaise, and the top bun.

Marzipan Directions:

Sprinkle powdered sugar over a wooden cutting board. Fill your sink or a large bowl with cold water. Place the sugar and 2/3 cup water in a saucepan and heat gently, stirring, until the sugar dissolves. Add cream of tartar and turn up the heat. Bring to a boil and cover, boiling, for 3 minutes. Uncover and boil until the temperature reaches 240 degrees on a candy thermometer. Place the saucepan in the cold water, stirring the sugar mixture constantly until it becomes thick and creamy. Stir in the ground almonds and the egg whites, the place back over low heat and stir for 2 minutes more until the mixture is thick. Separate marzipan into separate containers and mix in food coloring. Spoon the marzipan onto your cutting board, and turn it with a spatula until it cools down enough to touch. Coat your hands in powdered sugar and begin to knead the marzipan, working it until it is smooth and pliant. Kneed red food color into one half of the marzipan. Kneed green food color into the other half. Your marzipan can now be cut or molded into shapes.

For Vanilla Cupcakes:

It's your choice either take your favorite 2 or 3-layer homemade vanilla cake recipe or cake mix batter to make 24 cupcakes. Fill cups 2/3 full and bake for 21 - 26 minutes at 350 degrees.

For Chocolate Cake:

Bake your homemade or cake mix batter in a greased 9x13 pan at 350 degrees for 30 to 38 minutes.
