Yield: Makes 48 miniature cupcakes
Ingredients:
- 3 eggs
- 1 cup green Crème de Menthe
- 1/3 cup water
- 1/3 cup vegetable oil
- One 18-ounce yellow cake mix
- 48 Andes Crème de Menthe Thins (two 4.67 ounce boxes)
- Green icing
- Red icing
Preparation:
Preheat oven to 350 degrees F. Line mini-muffin/cupcake pan with 48 papers. In large bowl, stir together first set of ingredients. Continue to mix for 2 minutes. Pour batter in pan. Bake for 12 to 14 minutes. Cool completely. Place a dab of green frosting on each cupcake. Add one Andes Crème de Menthe Thins on each cupcake. Use red frosting to make candies look like packages.
