One-Egg Butter Crock Pot Cake

Everyone will enjoy this simple-yet-flavorful dessert that doesn't require turning on the oven or even having more than one egg in your refrigerator. If you have a few baking supplies and a crock pot, you can make this simple one-egg butter cake.

Ingredients

  • 1/4 cup (4 tablespoons) unsalted butter, softened

  • 1/2 cup sugar

  • 1 large egg

  • 1 cup all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/4 cup milk

  • 1/2 teaspoon pure vanilla extract, or butter flavoring

Steps to Make It

  1. Gather the ingredients. Grease and flour a 1-pound coffee can or the insert of a 4-quart crock pot.

  2. In a large bowl, using an electric mixer, cream together the butter and sugar until fluffy. Add the egg and mix well. Set aside.

  3. In a small bowl, whisk together the flour, baking powder, and salt.

  4. Add the whisked dry ingredients, milk, and vanilla extract to the butter-sugar mixture. Beat until well blended.

  5. Transfer the batter to the coffee can or crock pot insert.

  6. Set in the crock pot and cover with 2 paper towels.

  7. With the cover slightly ajar, cook on high for 2 hours or until a toothpick inserted into the center of the cake is clean or has just a few crumbs attached to it.

  8. Let the coffee can or insert remain in the crock pot heating element for 10 minutes. Then remove the tin or insert to a wire rack to continue cooling for an additional 10 minutes. Unmold, if desired, and cool completely (or serve warm).

  9. Slice cooled cake and serve simply with a dollop of sweetened whipped cream or ice cream, if desired.

What Else You Can Bake in Your Crock Pot

The slow cooker is such a versatile appliance, but many have never considered it for baking. It's a champ for baking in the summer when you don't want to heat up the house with a hot oven. Cakes, pies, quick breads, cobblers, brownies, and more can all be cooked in a crock pot.

Cobblers, crisps, and crumbles (and this butter cake) can be cooked right in the insert that came with your slow cooker and served hot right from the crock. Some baked goods, however, like pies and breads requiring structure need to be baked in a pan that is then placed in the slow cooker. Best results are achieved if the pan is placed on a small wire rack or trivet placed in the slow cooker so the heat can circulate under the pan like a traditional oven.
