Cheese Blintzes Made with Crepes

The Pocket Fold is great when the filled crepe is to be heated in a pan, as the filling won't come out.

Using your own homemade crepes is what makes this dish so special.

Prep Time: 25 minutes

Cook Time: 3 minutes

Total Time: 28 minutes

Ingredients:

  • 2/3 cup small curd cottage cheese
  • 1 cup ricotta cheese
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 egg yolk
  • -----
  • 6 crepes
  • 2 tablespoons butter
  • 1 cup strawberry preserves or good quality jam, warmed

Preparation:

Combine first set of ingredients. Mix well. Spoon mixture into center of crepe. Fold each crepe as shown in photo. Melt butter in pan. Carefully brown both sides of each blintz. Serve topped with warm strawberry preserves.
