Ingredients:
- 3-1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt
- ----
- 1 cup butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons cinnamon extract
- ----
- 10-1/2 ounce package (1-1/2 cups) cinnamon chips
- ----
- 4 teaspoons ground cinnamon
- 1/4 cup organic or sugar-in-the-raw
Preparation:
In a large bowl combine 1st set of ingredients with a wire whisk. Set aside. In a mixing bowl, cream butter and sugars. Add eggs one at a time. Once combined, add extract and stir. While mixing slowly add flour mixture until cookie dough is formed. Hand stir-in chips. Place cookie dough in refrigerator to rest while oven is heating. May either make that day or the next. Also, dough may be kept for 3 months in freezer in an airtight container.
Preheat oven to 400 degrees F. Lightly grease cookie sheet. Mix last 2 ingredients in shallow bowl. Take 1 tablespoon at a time of dough and roll into balls. Roll in cinnamon-sugar mixture and place on cookie sheet. Bake for 6 to 8 minutes. Cool in pan on rack for 2 minutes. Remove cookies to wire rack to cool completely.
Makes 44 cookies.
