  • 1 cups sugar
  • 1/2 cup butter, softened
  • 1 egg, well beaten
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 3/4 cup cold coffee
  • 1/2 cup raisins, chopped
  • 1/2 cup walnuts or pecans, chopped
  • 1 teaspoon vanilla


Preheat oven to 400 degrees F. Mix the sugar and butter together until creamy, then add the beaten egg and mix well. In a separate bowl, combine the flour, baking soda, salt, baking powder and cinnamon. Stir together, then add to the creamed mixture. Mix well, adding in the coffee, a little at a time. Combine the raisins, nuts, and vanilla, then fold into the batter. Drop cookies onto a greased baking sheet. Bake for 12 to 15 minutes.
