These Shortbread Cookies are good anytime of year.
Prep Time: 1 hour, 20 minutes
Cook Time: 15 minutes
Total Time: 1 hour, 35 minutes
Ingredients:
- 2-1/2 cups flour
- 1/2 cup finely chopped pecans, lightly toasted
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- ----
- 1-1/4 cup butter, softened
- 1 cup powdered sugar
- zest of 1 lemon
Preparation:
Combine first set of ingredients with a wire whisk. Set aside. Cream butter and powdered sugar. Add zest. Gradually add flour mixture. Mix well. Cover mixing bowl and refrigerate for one hour or overnight. Preheat oven to 325 degrees F. Lightly grease cookie sheet. Roll cookies into 2-inch balls. Roll the balls in the extra powdered sugar. Place on prepared cookie sheets. Bake for 12 to 15 minutes.
