Pie Cookies

Yes, it tasted just like eating a piece of pie: flaky on the outside and fruity on the inside.

I finally found a recipe that's similar to the Pie Cookies they make at Zehnders in Frankenmuth, MI. This way you can eat a piece of pie on the go without all of the mess.

This is one of those recipes you can make as easy or as complicated as you wish. Make everything from scratch or use store-bought crusts and fillings. It's up to you.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • double 9-inch pie crust
  • 21 ounce can pie filling*
  • milk
  • sugar

Preparation:

Preheat oven to 425 degrees F. Lightly grease baking sheet. Use a 3-inch cookie cutter to cut 7* circles from each pie crust. Spoon 3 tablespoons of pie filling in center of 7 circle. Top each circle with remaining crusts. Use a fork to seal the edges. Brush tops with milk and sprinkle with sugar. Bake for 20-25 minutes. If cookies are browning too fast, loosely cover with foil.

Makes 7* Cookies.

*You might be able to get more that 7 cookies out of your pastry by re-rolling it. Just remember, re-rolling store-bought pastries may make them tougher.
**If you make your own filling, it needs to be cooked and not too juicy.
