Gingersnaps

Prep Time: 15 minutes

Cook Time: 11 minutes

Ingredients:

  • 3/4 cup solid shortening
  • 1 cup brown sugar*
  • 1/4 cup molasses*
  • 1 egg
  • 2-1/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt

Preparation:

Combine**. Roll into 1 inch balls. Roll in sugar. Place on baking sheets.

Bake at 375° 8-10 min, or 11 min on insulated baking sheets.

Notes from Sue: "The cookies will puff up and then fall when they come out of the oven. Let cool on the baking sheets for a few minutes then transfer to racks to cool. I use a number 60 food dipper to form these, I think the recipe makes about 30 cookies."

* 1 cup white sugar and 1/2 cup molasses may be substituted for the brown sugar and 1/4 molasses.
