Cracker Jack Cookies

You won't believe it until you taste them. These Cracker Jack Cookies taste just like the candied popcorn Cracker Jacks. Thanks to Needlepoint 142 for telling me about these great tasting cookies.

F.Y.I. - Yes, these do look a little like Lace Cookies. The difference between the two is that Cracker Jack Cookies also have coconut and crisp rice cereal in them besides the rolled oats.

Prep Time: 20 minutes

Cook Time: 12 minutes

Ingredients:

  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ---
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • ---
  • 2 eggs
  • ---
  • 2 teaspoons vanilla
  • ---
  • 2 cups rolled oats
  • 2 cups crisp rice cereal
  • 1 cup coconut

Preparation:

Preheat the oven to 350 degrees F. Line or lightly grease a baking sheet. In a large bowl combine the first set of ingredients with a wire whisk. In a stand mixer bowl, or in a regular bowl using a hand mixer, cream the butter and sugars. Add the eggs one at a time mixing completely. Mix in the vanilla. Mix until all is combined. While mixer is running slowly add the flour mixture. Once combined add last set of ingredients. Stir until all is combined. Drop by teaspoonfuls onto prepared baking sheet.

Bake for 10 to 12 minutes. Remove from oven and cool on baking sheet for 2 minutes. Remove cookies to cooling rack to cool completely.

Makes 6 dozen cookies.
