Having lived in the south all of my life, I just don't know how I missed out on having Benne Wafers until now. Not only do they have a rich taste, but I really like the nutty texture, too. These are definately going to be a cookie made regularly in my house.

Cook Time: 08 minutes
Ingredients:
- 1 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- ---
- 1/2 cup butter
- 1 cup packed brown sugar (light or dark)
- 1 egg
- 1 teaspoon vanilla
- ---
- 1 cup (4.24 ounces/120 grams) sesame seeds, lightly toasted*
Preparation:
In a medium-sized bowl, combine first set of ingredients with wire whisk. Set aside. In another bowl, cream butter and sugar. Add egg and vanilla. Mix well. Slowly add flour mixture. Combine completely. Hand stir-in sesame seeds. Place cookie dough in refrigerator for at least 15 to 30 minutes. Preheat oven to 350 degrees. Lightly grease cookie sheet. Scoop out dough by tablespoons. Place remaining dough back in fridge**. Bake for 8 minutes. Place sheet on cooling rack. Leave cookies on there for 2 minutes then remove to cooling rack. Bake next batch of cookies on cool and lightly greased cookie sheet.
Makes apprx. 32 cookies.
*There are 3 ways to toast your sesame seeds. This time I used the stove-top method.
**I discovered the hard way that this dough must be cool when baked. My first batch came out perfect. My second batch all ran together. I ended-up with square cookies, because I had to cut them apart.
