Almond Cookies

These cookies can be make with either butter, margarine or solid shortening.

Almond Cookies can make an elegant gift.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes


  • 2-1/2 cups flour
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1 cup butter
  • 2 eggs, beaten
  • 1/8 teaspoon salt
  • 1 tablespoon almond extract
  • 1/4 pound whole, blanched almonds


Preheat oven to 325 degrees F. In food processor - mix flour, sugar, butter, salt, and baking soda until it forms little balls. Add eggs and extract. Roll out* dough on floured surface. Cut with 2 1/2 inch cookie cutter. Put on greased cookie sheet. Place almond in center of each cookie. Bake for 25 minutes.

Lately instead of rolling, I've shaped the dough into 2-inch balls. Then I used a cookie press (dipped in flour) with a daisy shape. The almond seems to fit perfectly in the middle of the design.

Very good recipe, Member thegrindre

I'm single so I cut this recipe in half to make about 20 cookies. I am now eating one, two, three, still hot from the oven. Mmm, good! So light and airy. Although, I've been looking for the heavier San Fransisco China Town type Almond Cookie, these will do until I find it. I'd like to try to give these a much heavier consistency. Overall, great recipe!
