Yield: 36 Peppermint Butter Cookies
Ingredients:
- 1 cup butter, room temperature
- 1/2 cup powdered sugar
- 1-1/2 teaspoons peppermint extract
- 1-3/4 cups flour
Preparation:
Cream butter and sugar until light and fluffy. Add extract and mix. Gradually add flour until all is well mixed. Place dough in refrigerator. Preheat oven to 350 degrees F. While oven is heating line cookie sheet with parchment paper or baking mat. Once oven is ready remove cookie dough from fridge. Roll dough into 1 to 2-inch balls. Flatten balls with cookie press or bottom of small glass dipped in flour. Bake for 12-14 minutes. Cool on pan, on wire rack for 10 minutes. Remove cookies from pan and cool completely on wire racks. Makes 3 dozen 1-inch flattened balls.
