Making Icebox Cookies with Step by Step Photo Instructions

Yield: Makes 40 Cookies
- 2 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 medium to large orange
- 3/4 cup (6 ounces) butter, room temperature
- 1/2 cup powdered sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon orange or lemon extract
Orange Icebox Cookie dough will be stiff and slightly greasy. Divide it in half. Shape into two 6-inch logs careful leaving sides rounded for round cookies or flatten sides to make cubes or square or rectangular-shaped cookies. Refrigerate overnight.
Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Remove one roll of dough from the fridge. Remove waxed paper. Use a serrated knife to cut 1/4 inch slices. Place on cookie sheet at least 1-1/2 inches apart. They expand slightly. Bake for 12 minutes or until edges are slightly brown. Cool on pan on rack for 2 minutes. Remove from pan and cool completely on rack. Repeat steps with other roll of dough.
