Making Icebox Cookies with Step by Step Photo Instructions

Yield: Makes 40 Cookies


  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • ----
  • 1 medium to large orange
  • 3/4 cup (6 ounces) butter, room temperature
  • 1/2 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon orange or lemon extract


In a small bowl with a wire whip, combine first set of ingredients. Set aside. Zest and juice the orange. Set aside. In a large bowl, cream the butter and sugars. Add the orange zest, 2 tablespoons of orange juice and orange extract. Gradually add in flour mixture. Mix until dough is completely combined.

Orange Icebox Cookie dough will be stiff and slightly greasy. Divide it in half. Shape into two 6-inch logs careful leaving sides rounded for round cookies or flatten sides to make cubes or square or rectangular-shaped cookies. Refrigerate overnight.

Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Remove one roll of dough from the fridge. Remove waxed paper. Use a serrated knife to cut 1/4 inch slices. Place on cookie sheet at least 1-1/2 inches apart. They expand slightly. Bake for 12 minutes or until edges are slightly brown. Cool on pan on rack for 2 minutes. Remove from pan and cool completely on rack. Repeat steps with other roll of dough.
