Ingredients:
- 1-1/4 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup butter, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 heaping teaspoon vanilla
- 2 cups rolled oats
- 1 cup coconut
- 1 cup chopped pecans, lightly toasted
- 1 cup (6 ounces) semi-sweet or dark chocolate chips
Preparation:
In a small bowl, with a wire whisk, combine flour, salt and baking soda. Set aside. Cream butter and sugars. Add eggs one at a time in between mixing. Add vanilla. Beat until completely combined. Hand stir in remaining ingredients. Place bowl in fridge.
Preheat oven to 350 degrees F. Lightly grease or line baking sheets with parchment paper. Remove Nutty Oatmeal Chocolate Chip Cookie batter from fridge. Drop cookie dough by 2-tablespoons or by 1/8 cup measuring cup. Bake for 12 to 15 minutes. Cool on pans on wire racks for 2 minutes. Remove to rack to finish cooling. Store in airtight container.
