Blueberries are the ultimate summer berry. For a few weeks each summer, many desserts are made with these tasty berries. What makes this recipe for easy blueberry cobbler so easy is that it's made with a cake mix. Prep time is a mere 15 minutes. Simply make the blueberry mixture, then dump the flavor of cake mix you desire on top and bake. You could use frozen blueberries in this recipe as well.

It's the perfect dessert to throw together for a family dinner, picnic, or get-together. Serve warm topped with ice cream or whipped cream.

Ingredients

  • 1/2 cup granulated sugar

  • 2 tablespoons all-purpose flour

  • 1 tablespoon fresh lemon juice

  • 1/4 cup water

  • 4 cups fresh blueberries

  • 1 (18-ounce) box vanilla, yellow, or white cake mix

  • 1 cup pecan pieces

  • 1 cup unsalted butter, melted

Steps to Make It

  1. Gather the ingredients.

  2. Preheat the oven to 350 F. Lightly grease a 9 x 13-inch baking pan.

  3. In a saucepan, stir together the sugar and flour.

  4. Add the lemon juice and the water stir to combine.

  5. Next, stir in the blueberries. Turn the heat on to medium-high. Keep stirring the blueberries until the mixture boils.

  6. Pour the blueberry mixture into the prepared pan.

  7. Sprinkle the top with the cake mix and pecans.

  8. Drizzle the butter over the top. Cover as much of the cake mix as possible.

  9. Bake for 55 minutes or until blueberries have bubbled up through the mix topping.

Recipe Variations

  • Add a refreshing twist of lemon flavor by using a lemon cake mix instead.
  • Change up the fruits: Add other fruits in with the blueberries, such as raspberries and/or blackberries, or in place of blueberries, try blackberries, pineapple, or even cherries.

In the summertime, bake this in the morning. Leave it out to cool. Heat individual servings of this Easy Blueberry Cobbler in the microwave for 30 seconds or less, depending on your appliance.
