Easy Blueberry Cobbler

Total Time: 1 hour, 10 minutes

Ingredients:

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 tablespoon fresh lemon juice
  • 1/4 cup water
  • 2 pints fresh blueberries, rinsed and drained
  • 1 - 18 ounce vanilla, yellow or white cake mix
  • 1 cup pecan pieces
  • 1 cup melted butter

Preparation:

Preheat oven to 350 degrees F. Lightly grease 9x13 baking pan. In a saucepan, stir together sugar and flour. Add lemon juice and water and combine. Stir in blueberries. Turn heat on to medium-high. Keep stirring until mixture boils. Pour into prepared pan. Sprinkle top with cake mix. Then pecans. Drizzle butter over top. Covering as much as possible. Bake for 55 minutes or until blueberries have almost covered cake mix topping. Best served warm with ice or whipped cream.

In the summertime, bake this in the morning. Leave out to cool. Heat individual servings of this Easy Blueberry Cobbler in the microwave for 30 seconds or less depending on your microwave.

I used 1/2 black berries and 1/2 blueberries as well, since we just happen to recently pick both and had them in the freezer. I also used brownie mix, because that's all I had on hand, as well as chopped walnuts instead of pecans. So, (hehe) I made several variations, but the concept is great and interchangeable depending on whatever the cook has in stock! That's why I liked it! :) Turned out very good, so you're free to incorporate your own style to this dish! Plus, very little clean-up involved while preparing, so extra kudos to that category! The cobbler (or what I made is called black & blue brownie cobbler, haha) turns out a tad liquidy in the pan bottom, but otherwise is watery in the mouth :]
