Alaskan Blueberry Cobbler

Cook Time: 30 minutes

Ingredients:

  • 1/2 cup plus 1 tablespoon sugar, divided
  • 2 tablespoons cornstarch
  • 4 cups fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 cup flour
  • 1-1/2 teaspoon baking powder
  • 3 tablespoons melted and cooled butter or vegetable oil
  • 1/2 cup milk

Preparation:

Blend 1/2 C. sugar and cornstarch in medium saucepan. Stir in blueberries and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased baking dish. Keep warm.

Preheat oven to 400 degrees F. Measure flour, 1 T. sugar and baking powder into a mixing bowl. Add butter and milk, blend together until dough forms. Drop dough by six spoonfuls onto hot fruit. Bake 25 to 30 minutes or until biscuit topping is golden brown.

Serve warm with some decadent Royal Crown Vanilla Ice Cream.
