Yield: Serves 4

Ingredients:

  • 8 ounces semisweet chocolate chips
  • 2 tablespoons strong coffee
  • 2 tablespoons orange extract
  • 1 egg yolk
  • 2 egg whites
  • A pinch of salt
  • 2 tablespoons sugar
  • 1/2 cup heavy cream (or 1/2 carton of 8 ounce Cool Whip)

Preparation:

Melt the chocolate, with coffee added, over low heat. Remove from heat and add first the orange extract and then the egg yolk, stirring until the mixture is smooth. *In another bowl, beat the egg whites and salt; add the sugar and beat with an electric mixture until stiff peaks form. Lastly, whip the cream until it is stiff; fold into the egg whites. Fold egg white mixture into the chocolate mixture. Place in the refrigerator, and chill until ready to serve.

Notes in the Margin -

*If you don't happen to be using pasteurized egg whites, they need to be tempered first to avoid salmonella. Begin whisking the egg whites, salt and sugar in the top of a double boiler until soft peaks form. Remove from the heat and continue until stiff peaks form. Continue on with the whip cream portion of the recipe.

Raw eggs in recipe??? Bad idea, Member fairbre

This recipe calls for raw eggs without cooking them at some point; raw eggs are dangerous to eat due to the risk of salmonellosis (a foodborne illness). I am surprised any current cookbook would suggest using raw eggs as the foodborne illness risk is so well known.
