All About Chess Pies
1. Lemon Chess Pie
Of all of the chess pies out there, Lemon Chess Pie is my favorite. It's like a Lemon Meringue Pie without the meringue.
2. Dark Chocolate Chess Pie
While at my daughter's church choir Christmas party, I was talking to the other mothers about homemade gifts. One mother said she always gives her neighbors Dark Chocolate Chess Pies. Of course, my initial thought was "I want to be her neighbor." My next one naturally was to get her recipe.
3. Coconut Chess Pie
You can double your enjoyment pleasure with this crustless Coconut Chess Pie, because it makes 2 pies.
4. Blood Orange Chess Pie
You'd think the red insides of a blood orange would cause the inside of this Blood Orange Chess Pie to be red as well. Unfortunately, the yellow egg yolks cause it to be closer to dark yellow-orange in color.
5. Citrus Chess Pie
Chess Pies are considered budget desserts because they are made from what's on hand. I initially wanted to make a Pineapple Chess Pie, but I had no crushed pineapple. I substituted canned citrus salad (white and pink grapefruit slices along with orange slices in a light syrup) for the pineapple. This Citrus Chess Pie turned-out to be a very tasty budget dessert.
