Just like the recipe name implies, these Lemon Cheesecake Bars are easy to make.

Cook Time: 35 minutes
Ingredients:
- 1 box lemon pudding cake mix
- 3 eggs
- 1/3 cup vegetable oil
- 2- 8 ounce packages of cream cheese
- 1 cup sour cream
- 1/2 cup sugar
- zest and juice of 1 lemon, optional
Preparation:
Preheat oven to 350 degrees F. Grease bottom of 13-inch by 9-inch by 2-inch pan.
Measure 1 cup of cake mix and set aside. Combine remaining mix with 1 egg and oil. Press in bottom of pan. Bake for 10 minutes. Combine reserved cake mix, 2 eggs, cream cheese, sour cream, and sugar. Stir in lemon zest and juice. Spread over crust.
Bake for 35 minutes. Serve cold or room temperture.
